I know it sounds a bit weird to put lemon juice into a pancake recipe, and I must say that I was pretty skeptical myself. But I wanted to try something new and they actually turned out absolutely delicious and a “fresh”. Worth a try!
20g oats
10g coconut flour
30g vanilla protein powder
30g apple sauce
1 tbsp lemon juice
10g shredded coconut
1 egg / 2 egg whites
2 tbsp greek yoghurt
0,25-0,5 dl milk/ water
1 tbsp baking powder
1 tbsp psyllium husk
a bit salt
Mix it all together in a blender, cook them on medium heat with coconut oil of needed. I used a non-stick pan.
